Vegan Kefir Ranch Dressing

Kefir is a thin, yogurt-like drink made with a Symbiotic Culture Of Bacteria and Yeast - what the kombucha world affectionately shorthands as "SCOBY." The symbiosis of these cultures means that kefir, while originally a dairy product, can be pretty much made from anything.
Kefir, kombucha, sourdough bread... they all share a common production method, and therefore similar flavors: namely, a rich malty flavor from yeast fermentation, and a sharp tang from Lactobacillus.
Kefir Kult, in Toronto, ON makes a vegan coconut milk kefir that is delicious to drink, but if the sour flavor is too much, it makes an equally satisfying vegan ranch dressing. The coconut milk base already contains emulsified fat, so there's no need to add any oil, either. We ate it with a local greens salad on a recent vacation.
Ingredients
1 cup coconut milk kefir (or plain dairy kefir)
1 green onion, finely chopped
2 tbsp each of:
mint, finely chopped
basil, finely chopped
parsley, finely chopped
salt and pepper, to taste
Method
Put all ingredients in a bowl and mix thoroughly. Allow to sit for 15 minutes prior to using as a salad dressing or vegetable dip.
Variations
Substitute any herbs you like! Dill, tarragon, and mint will go well together; basil, parsley, oregano also.
